EXECUTIVE SOUS CHEF | KALIMOTXO at ARRIVE AUSTIN

POSITION PROFILE:

The Executive Sous Chef leads the restaurant to meet company goals and standards in terms of sales and product quality. The Exec Sous plans, tracks, and executes foodservice and prep. This position directly supervises hourly lead(s), and the rest of the kitchen team. This position is jointly responsible for the overall health of the restaurant, profit, turnover rate, and growth of hourly team members. This position reports directly to the Chef de Cuisine.

TASKS AT HAND:

  • Active role in development of the menu, work with the chef de cuisine and corporate team to create new dishes.
  • Be responsible for the overall quality of the food and respond with changes quickly.
  • Work at a quick, efficient, and safe pace during your shift. Ensure the entire team is doing the same.
  • Utilize strong verbal and non-verbal communication to communicate standards and expectations to your team.
  • Hold high standards for yourself regarding cleanliness and productivity.
  • Mentor hourly sous and kitchen team on how to lead and develop skills they will need for their next position.
  • Set standards for station cleanliness and organization, the flow of service and communicating during service.
  • Appropriately follow the company corrective action program if an employee is consistently not meeting standards.
  • Work with the Restaurant General Manager to address steps of service issues or concerns
  • Run bi-annual deep cleans and take accountability for restaurant cleanliness
  • Assist CDC in 30, 60, 90-day check ins for new team members as well as quarterly check ins
  • Prepare food and assist CDC in organizing photoshoots for Marketing Team
  • Assist CDC in running all in house events and creating menus
  • Monitor small wares and disposables
  • Inspect the restaurant areas regularly to ensure compliance with all programs, rules, and standards
  • Spends time on the restaurant floor and proactively build relationships with guests
  • Maintain a proper inventory through thoughtful purchasing, always purchasing local when available
  • Conduct monthly food inventory using all Palisociety tools and protocols
  • Analyze sales and identifies Key Performance Indicators to keep on track with budget and sales goals
  • Reviews and monitors scheduling, labor costs, purchases, and inventory
  • Participates and provides input and feedback in regular meetings with the Palisociety and Emmer & Rye Corporate Teams.
  • Place orders for restaurant
  • Participates in the property Safety Committee and comply with all safety and health standards and protocols.

  • Complete job responsibilities in a timely and effective manner in accordance with Palisociety and Emmer & Rye company policies and procedures.
  • Maintain a favorable working relationship with all company employees to promote a harmonious work environment, boosting morale, productivity, and efficiency/effectiveness
  • Provide a favorable image of the company, including restaurant cleanliness (inside and out) and upholding staff appearance/uniform standards.
  • Prioritize keeping the BOH team motivated and engaged daily, diligently working to keep morale high and foster a healthy, positive work culture
  • Perform other duties and responsibilities as required or requested by corporate and partners.

  • Enforce sanitary practices for food handling, general cleanliness, and maintenance of kitchen, bars, and dining areas.
  • Ensure compliance with operational standards, company policies, federal/state/local laws, and ordinances.
  • Communicate with CDC effectively concerning consistent high quality of food presentation.
  • Must be ServSafe Manager certified and uphold all ServSafe guidlines.
  • Must be TABC certified.
  • Must be flexible in hours and shifts, hours will vary.
  • Ability to perform all functions in the butcher/fish area
  • Position requires prolonged standing, bending, stooping, twisting, lifting products and supplies weighing 45 pounds, and repetitive hand and wrist motion.
  • Work with hot, cold, and hazardous equipment as well as operates phones, computers, fax machines, copiers, and other office equipment.
